Ceviche is the perfect summertime snack. Light, refreshing, citrusy, and chilled, the Latin American seafood-based dish is a staple in South Florida during the hotter months. Fun fact: While the fish or shellfish in ceviche is technically raw, it’s cured by the citrus acid during the marinating process. Ceviche can be made with almost any type of fish—though white fish (like sea bass, snapper, and mahi), shrimp, and octopus are the popular variations—mixed with everything from diced tomatoes, onions, jalapeños, and cucumber to tomato paste, fresh herbs, and sweet potatoes.
